For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Combine every ingredients in a pot, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the heat and leave to cool fully. Decant to a sterilised bottle, seal and store in the refrigerator, where it will keep for up to four weeks.
Preparing the Batch Mix: Pour the specified liquids into one sizeable container, allow it to infuse for an hour, then filter it best through muslin, so it's completely strained.
When ready to serve: Measure 85ml of the cocktail base into a mixing glass packed with ice, and agitate lightly for one minute to chill. Filter into a frosted cocktail glass or similar, top with some cranberries and complete it with a brief mist with the mandarin essence above the glass.
